James Carruthers Hutton (c. 1845–1886)

The late Mr J. C. [James Carruthers] Hutton, though for many years a frequenter of the district, and an extensive purchaser of our potato-fattened pigs, had only lately shown his great confidence in the district by building extensive premises on the Dennington road. Instead of sending the raw material to Melbourne by steamer it went to these premises, where it was converted into the manufactured article, in the shape of luscious bacon. The industry was flourishing apace, and bid fair to rival some of the big Chicago bacon factories, when Mr. Hutton was called away. The business is still to be carried on, but the loss of the late owner's business tact and enterprise will be severely felt.
